Oh the Joy of a Cooking Class

Earlier this month I attended my first ever cooking class led by a Master Chef. All I can say is wow! In class we learned how to make sauces from scratch using a terrifying amount of butter. Learning from a professional is game changing, even the way he cooked pasta was educational (put the salt in the water after it boils to avoid pitting your stainless steel).
We learned sauces, and even though that might not really challenge your cooking
game, it can. You can see all of the recipes here:
A homemade tomato sauce (the first one in the list) can be much healthier than store
bought. Canned sauce that you buy in the grocery store is full of sugar – check the
label. It is unreal how much sodium and sugar are in there!
Making red chile sauce by creating a roux using flour and butter can add depth to your
enchilada and posole.
The Chicken Marsala uses mushroom and is excellent. To increase the nutrient value,
add extra mushrooms, serve your sauce on a vegetable (like baked potato) or whole
wheat pasta.
Try one today, you won’t regret it!
If you ever make it to Santa Fe, here is the link to sign up for affordable, professional
chef led cooking classes.
